What is passerillage? Sweet Wine

Do you know what Passerillage is?

It’s the method used to make our Noces d’or Chasselas cuvée.

This ancient method consists of drying the grapes directly on the vine or in small crates after the harvest.

At Union Vinicole, we dry the bunches off the vine. This method concentrates sugar, aromas and acidity! The result is a wine with an explosion of flavors.

Drink it with blue-veined cheeses, yellow fruit tarts, foie gras… Or just for fun!
